“I reworked this recipe to have more protein and less carbs. Its a very loose interpretation of a spinach chicken enchilada bowl. A serving is 3oz 2% cottage cheese 2oz spinach 1/3c beans 4oz chicken & two corn tortillas that I spritzed with coconut oil and tossed in the air fryer.”

Instructions
1.
Preheat your air fryer to 375°F (190°C).

In a large bowl, combine shredded chicken, chopped spinach, black beans, cottage cheese, cumin, garlic powder, salt, and pepper. Mix well.
3.
Cut the low-carb tortillas into quarters and spritz with coconut oil spray. Place them in the air fryer basket and cook for 5-7 minutes until crispy.
4.
In a serving bowl, layer the chicken and spinach mixture. Top with the crispy tortilla chips.
5.
Serve immediately and enjoy your healthy chicken enchilada bowl!
