
Healthy Chicken Kabob Recipe

Instructions
1.
Preheat your grill or grill pan to medium-high heat (about 375°F).
2.
In a large bowl, combine the chicken cubes, bell peppers, zucchini, red onion, cherry tomatoes, olive oil, garlic powder, paprika, salt, and pepper. Toss until everything is well coated (about 5 minutes).

Thread the chicken and vegetables onto skewers, alternating between chicken and veggies (about 10 minutes).

Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.

While the kabobs are grilling, heat the fava beans in a small saucepan over medium heat until warmed through (about 5 minutes).
6.
Serve the kabobs with a side of fava beans and a generous dollop of babaganoush.

1 lb boneless, skinless chicken breast, cut into cubes

2 bell peppers, cut into chunks
3.
1 zucchini, sliced
4.
1 red onion, cut into wedges
5.
1 cup cherry tomatoes
6.
1 can (15 oz) fava beans, drained and rinsed
7.
2 tablespoons olive oil
8.
2 teaspoons garlic powder
9.
1 teaspoon paprika
10.
Salt and pepper to taste
11.
1 cup homemade or store-bought babaganoush (low in added sugars)
