Instructions

  • 1.

    Prepare the quinoa according to package instructions and let it cool (about 10 minutes).

  • 2.

    In a large bowl, combine the shredded chicken, cooked quinoa, and sliced bell peppers.

  • 3.

    Lay out the lettuce leaves on a plate. Spoon the chicken and quinoa mixture into each leaf.

  • 4.

    Top with avocado slices and cucumber.

  • 5.

    Drizzle tzatziki sauce over the filling and add a small amount of mayonnaise if desired.

  • 6.

    Wrap the lettuce around the filling and enjoy!
