Instructions

1. Heat olive oil in a large skillet over medium heat.

2. Add chopped cabbage, green bell pepper, and tomato. Sauté for about 5 minutes until softened.

3. If using chicken, add diced chicken breast and cook until no longer pink, about 7-10 minutes. For a meatless option, add black beans and cook until heated through.

4. Stir in beaten eggs and soy sauce, cooking until eggs are set.

6. Serve the mixture in lettuce leaves, topped with cilantro and a dollop of low-fat sour cream.
