Instructions
1.
In a large bowl, combine the cooked chicken, black beans, red bell pepper, avocado, mixed greens, onion, and tomato.

Drizzle with olive oil and toss gently to combine.
3.
Season with salt and pepper to taste.
4.
Serve with a sprinkle of cheese (if using) and a side of ranch dressing or Greek yogurt.

1 can black beans, rinsed and drained

1 red bell pepper, diced

1 avocado, diced
5.
2 cups mixed greens (spinach, kale, etc.)

1 small onion, diced

1/2 cup low-fat cheese (optional)

1/4 cup low-fat ranch dressing (or Greek yogurt as a healthier alternative)
10.
1 cup cherry tomatoes, halved

1 tablespoon olive oil
