Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, combine the ground chicken, breadcrumbs, parsley, onion, garlic, egg, salt, and pepper. Mix until well combined.

    Form the mixture into small meatballs, about 1 inch in diameter.

    Place the meatballs on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until cooked through and golden brown.

    While the meatballs are baking, prepare the yogurt sauce by mixing the low-fat yogurt with a pinch of salt and pepper.

    Warm the pita breads in the oven for a few minutes.

    To assemble, place a few meatballs in each pita, top with cucumber, tomato, onion, yogurt sauce, and crumbled feta cheese.
