Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, combine ground chicken, cooked quinoa, chopped spinach, garlic powder, onion powder, oregano, salt, and pepper. Mix until well combined.
3.
Form the mixture into small meatballs, about 1 inch in diameter.
4.
Place the meatballs on a baking sheet lined with parchment paper.
5.
In a separate bowl, toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on another baking sheet.
6.
Bake the meatballs and sweet potatoes in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and the sweet potatoes are tender.
7.
While the meatballs and sweet potatoes are baking, steam the broccoli until bright green and tender, about 5-7 minutes.
8.
Serve the meatballs with sweet potatoes and broccoli on the side.
