Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, combine the ground chicken or turkey, cooked brown rice, garlic powder, onion powder, salt, and pepper. Mix well. If using, add the egg for binding.
3.
Form the mixture into meatballs, about 1 inch in diameter.
4.
Place the meatballs on a baking sheet lined with parchment paper and spray lightly with olive oil.
5.
Bake for 20-25 minutes, or until cooked through and golden brown.
6.
While the meatballs are baking, steam or sauté the broccoli, yellow bell pepper, carrots, asparagus, and zucchini until tender.
7.
Serve the meatballs over the sautéed vegetables and enjoy!
