Instructions
1.
In a large mixing bowl, combine the shredded rotisserie chicken, diced apple, and chopped celery.
2.
In a separate small bowl, mix together the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth.
3.
Pour the yogurt mixture over the chicken mixture and stir until everything is well coated.
4.
If using, fold in the chopped green onions and spinach or mixed greens for added fiber.
5.
Taste and adjust seasoning if necessary. Serve immediately or refrigerate for later.
