Instructions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes. Set aside.

    In a large bowl, combine mixed greens, cherry tomatoes, red onion, and sautéed mushrooms.

    In a separate bowl, whisk together the remaining olive oil, balsamic vinegar, salt, and pepper to create a dressing.

    Add the shredded chicken, grapes, and feta cheese to the salad mixture.

  • 5.

    Drizzle the dressing over the salad and toss gently to combine all ingredients.
