Instructions
1.
In a large bowl, combine the cooked quinoa, shredded chicken, grapes, corn, carrots, and red onion.
2.
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
3.
Pour the dressing over the salad mixture and toss gently to combine.
4.
Add the mixed greens and crumbled blue cheese, and toss again until everything is well coated.
5.
Serve immediately or refrigerate for up to 2 hours before serving.
