Instructions
1.
In a large bowl, combine the shredded chicken, cooked quinoa, and chopped vegetables (lettuce, cherry tomatoes, cucumber, bell peppers, and red onion).

Add the halved grapes to the mixture.
3.
In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
4.
Pour the dressing over the salad and toss gently to combine all ingredients.
5.
Serve immediately or refrigerate for 30 minutes to let the flavors meld.
