Instructions
1.
In a large bowl, combine the shredded chicken, mixed salad greens, sliced bell peppers, and red onion. (5 minutes)
2.
Add the blueberries and pistachios to the salad mixture. (2 minutes)
3.
In a small bowl, mix the Greek yogurt with a pinch of salt and pepper to taste. (2 minutes)
4.
Drizzle the yogurt dressing over the salad and toss gently to combine. (2 minutes)
5.
Serve immediately with sweet potato chips on the side or store in the refrigerator for later. (4 minutes)
