Instructions

Prepare the rice: Cook japonica and black rice according to package instructions (about 20 minutes).

Cook the chicken: Grill or bake the chicken breast until fully cooked (about 15 minutes). Slice it into strips.

Prepare the vegetables: Slice the carrots and cucumber. You can steam the carrots for a softer texture if desired.
4.
Make the dressing: In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
5.
Assemble the salad: In a large bowl, combine mixed greens, sliced chicken, rice, carrots, and cucumber. Drizzle with dressing and toss gently to combine.
