Instructions

  • 1.

    In a large bowl, combine the Napa cabbage, kale, and mint. (2 minutes)

  • 2.

    Add the cooked quinoa, cherry tomatoes, bell peppers, cucumbers, and chickpeas. Toss gently to mix. (3 minutes)

  • 3.

    In a separate bowl, mix the diced chicken, feta cheese, sumac, salt, and pepper. (2 minutes)

  • 4.

    Add the chicken mixture to the salad and toss everything together. (2 minutes)

  • 5.

    Drizzle with olive oil if desired, and serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors. (5 minutes)

    1 can (15 oz) chickpeas, rinsed and drained

    1 cup cooked chicken breast, diced

  • 10.

    1/2 cup feta cheese, crumbled

  • 11.

    1 tsp sumac

  • 12.

    Salt and pepper to taste

  • 13.

    1 tbsp olive oil (optional for dressing)
