Instructions
1.
In a large bowl, combine the shredded chicken, shredded carrots, and spinach (if using).
2.
Add hummus and mix until everything is well coated. Season with salt and pepper to taste.
3.
Warm the whole wheat tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
4.
Spread a generous amount of the chicken salad mixture onto each tortilla.
5.
Roll the tortillas tightly and slice them in half. Serve with extra carrots on the side.
