Instructions
1.
In a skillet, heat olive oil over medium heat. Add shrimp and cook for 2-3 minutes until pink and opaque.

In a large bowl, combine shredded chicken, cooked shrimp, chopped lettuce, shredded carrots, and cherry tomatoes if using.
3.
Drizzle with lemon juice, and season with salt and pepper. Toss gently to combine.
4.
Serve immediately or refrigerate for up to 2 hours before serving.
