Instructions
1.
In a large bowl, combine the shredded chicken, Greek yogurt, celery, red onion, parsley, Dijon mustard, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated. (5 minutes)
2.
Toast the whole wheat bread slices until golden brown. (3-5 minutes)

Layer each slice of bread with a romaine lettuce leaf and top with a generous scoop of the chicken salad mixture. (2 minutes)
4.
Serve with pickle spears on the side.

1/2 cup plain Greek yogurt (low-fat)

1/4 cup diced celery

1/4 cup diced red onion
5.
1/4 cup chopped fresh parsley
6.
1 tablespoon Dijon mustard

1 tablespoon lemon juice
8.
Salt and pepper to taste
9.
4 slices whole wheat bread
10.
4 leaves of romaine lettuce
11.
Pickle spears for serving
