Instructions
1.
In a large bowl, combine the mixed greens, cucumber, red onion, bell pepper, and cherry tomatoes. (5 minutes)
2.
Add the diced chicken breast, feta cheese, sunflower seeds, avocado, and kalamata olives to the bowl. (5 minutes)
3.
Drizzle the Greek vinaigrette over the salad and toss gently to combine all ingredients. (2 minutes)
4.
Serve immediately or refrigerate for up to 2 hours before serving.

4 cups mixed greens (spinach, romaine, arugula)

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1 cup bell pepper, diced

1 cup cherry tomatoes, halved

2 cups cooked chicken breast, diced

1/2 cup feta cheese, crumbled
8.
1/4 cup sunflower seeds
9.
1 avocado, diced
10.
1/4 cup kalamata olives, pitted and sliced
11.
1/4 cup Greek vinaigrette (low-fat or homemade)
