Your choice of steak with spinach and mushrooms for dinner is a fantastic combination of both lean protein and fiber. Youre halfway through your weekly goal lets keep it going Allison!

Instructions

  • 1.

    1. Preheat your grill or skillet over medium heat.

  • 2.

    2. Season the chicken breasts with salt and pepper, then grill for about 6-7 minutes on each side until fully cooked.

  • 3.

    3. While the chicken is cooking, sauté the spinach and mushrooms in a non-stick pan until tender, about 5 minutes.

  • 4.

    4. Toast the whole grain buns lightly on the grill or in a toaster.

  • 5.

    5. Assemble the sandwich: spread a layer of low-fat mayonnaise or Greek yogurt on the bottom bun, add the grilled chicken, sautéed spinach, mushrooms, and a generous handful of arugula.

    6. Top with the other half of the bun and serve immediately.
