Today I had a chicken breasts sandwich for dinner. I opted to drizzle sriracha sauce on the chicken instead of my usual condiments such as mayo ketchup and pickles. This was served with a tomato cucumber fruit salad. The fruit salad combined black pepper oregano garlic paste peaches blueberries and plum drizzled with olive oil and red hot pepper flakes. It was another excellent day of practicing mindfulness. This combination was very easy and quick to put together and the addition of the spices made this recipe quite delicious. P.S. This the one hamburger bun that I simply just cant give up.

Instructions

    1. Preheat your grill or skillet over medium heat.

    2. Season the chicken breasts with black pepper, oregano, and garlic paste.

    3. Cook the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

    4. While the chicken is cooking, prepare the fruit salad by combining cherry tomatoes, cucumber, peach, blueberries, and plum in a bowl.

    5. Drizzle the fruit salad with olive oil and sprinkle with red pepper flakes. Toss gently to combine.

    6. Once the chicken is cooked, assemble the sandwich by placing the chicken breast on the whole grain bun and drizzling with sriracha sauce.

    7. Serve the sandwich with the fruit salad on the side.
