“I made the chickpea sweet potato recipe to have for dinner tonight and tomorrow evening. It doesnt look exactly like the pic! Lol but still looks good to me!I had some chickpeas left over plus sauce spinach and lots of pomegranate seeds so Im going to use those ingredients to make a salad to bring to work w me tomorrow using only 1 tbsp of pomegranate seeds in it.”

Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Wash and peel the sweet potatoes, then cut them into cubes. Toss with a little olive oil, salt, and pepper.
3.
Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes, or until tender and slightly caramelized.
4.
In a large bowl, combine the roasted sweet potatoes, chickpeas, and chopped spinach.
5.
In a small bowl, whisk together the yogurt, olive oil, lemon juice, salt, and pepper to create a dressing.
6.
Pour the dressing over the salad and toss gently to combine.
7.
Top with pomegranate seeds before serving.

2 medium sweet potatoes, roasted and diced

1 can (15 oz) chickpeas, drained and rinsed

2 cups fresh spinach, chopped
4.
1 tablespoon pomegranate seeds
5.
1/4 cup low-fat yogurt or a plant-based alternative

1 tablespoon olive oil
7.
1 tablespoon lemon juice
8.
Salt and pepper to taste
