Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Spread the drained chickpeas on a baking sheet and drizzle with 1 tablespoon of olive oil, salt, and pepper. Roast for 30 minutes until crispy.
3.
In a large bowl, combine the chopped kale, romaine lettuce, red onion, cherry tomatoes, sunflower seeds, and capers.
4.
In a small bowl, whisk together the remaining olive oil and lemon juice. Pour over the salad and toss to combine.
5.
Once the chickpeas are roasted, add them to the salad and mix well. Serve immediately.

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup sunflower seeds

2 tablespoons capers, rinsed

1/4 cup red onion, finely chopped

1/4 cup cherry tomatoes, halved

2 tablespoons olive oil
9.
1 tablespoon lemon juice
10.
Salt and pepper to taste
