Instructions
1.
In a large bowl, combine the cooked chickpeas, brown rice, diced tomatoes, banana peppers, cucumber, and kalamata olives.
2.
Add the crumbled feta cheese and mix gently to combine all ingredients.
3.
Drizzle the Greek vinaigrette and tzatziki sauce over the salad, and toss to coat evenly.
4.
Season with salt and pepper to taste. If using, add fresh spinach for extra fiber.
5.
Serve immediately or refrigerate for up to 2 days for flavors to meld.
