Instructions
1.
In a large bowl, combine the rinsed garbanzo beans, mixed salad greens, cherry tomatoes, cucumber, and red onion.
2.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
3.
Drizzle the dressing over the salad and toss gently to combine.
4.
If using, sprinkle feta cheese on top before serving.
5.
Serve immediately or refrigerate for up to 2 hours before serving for flavors to meld.

1 can (15 oz) garbanzo beans, rinsed and drained

4 cups mixed salad greens (spinach, arugula, and romaine)
3.
1 cup cherry tomatoes, halved
4.
1 cucumber, diced
5.
1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)
7.
2 tablespoons olive oil
8.
1 tablespoon lemon juice
9.
Salt and pepper to taste
