Instructions
1.
In a large bowl, combine the rinsed garbanzo beans, mixed lettuce, cherry tomatoes, cucumber, red onion, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
3.
Drizzle the dressing over the salad and toss gently to combine.
4.
Serve immediately or refrigerate for up to 30 minutes to let the flavors meld.
