Instructions
1.
In a large bowl, combine the mixed greens, corn, shredded carrots, and red onion.

Add the shredded chicken (or chickpeas) and shredded cheese to the bowl.
3.
In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
4.
Drizzle the dressing over the salad and toss gently to combine all ingredients.
5.
Serve immediately or refrigerate for up to an hour before serving for a chilled salad.
