Instructions
1.
In a large bowl, combine the chopped kale and spinach. (2 minutes)

Add the cooked quinoa, imitation crab or real crab meat, and chopped artichoke hearts. (3 minutes)
3.
In a small bowl, mix the light mayonnaise or Greek yogurt with lemon juice, salt, and pepper. (2 minutes)
4.
Pour the dressing over the salad and toss gently to combine. (2 minutes)
5.
Top with sliced tomatoes and crumbled blue cheese before serving. (2 minutes)
