Instructions
1.
1. In a bowl, whisk the eggs with salt and pepper until well combined (2 minutes).

2. Heat a non-stick skillet over medium heat and add a little olive oil (1 minute).

3. Pour the egg mixture into the skillet and cook until the edges start to set (3-4 minutes).

4. Gently lift the edges with a spatula and let the uncooked egg flow underneath (2-3 minutes).

5. Once fully cooked, slide the omelette onto a plate.

6. In a separate bowl, combine diced cucumber, sliced tomatoes, spinach, olive oil, lemon juice, salt, and pepper (2 minutes).

7. Serve the omelette alongside the cucumber salad.
