Instructions

In a skillet, heat olive oil over medium heat. Add sliced seitan and cook for about 5-7 minutes until golden brown. Season with salt and pepper.

Add the cooked seitan to the bowl and drizzle with lemon juice. Toss gently to combine.

Serve the salad in whole grain wraps or on a plate, garnished with extra mint if desired.
