Look at all those veggies!! Lovely great meal even if its on the late side

Instructions

  • 1.

    In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and avocado. (5 minutes)

  • 2.

    In a skillet, heat olive oil over medium heat. Add ground lamb and cook until browned and cooked through, about 10-15 minutes. Season with salt and pepper. (15 minutes)

  • 3.

    Prepare the dressing by whisking together olive oil, apple cider vinegar, salt, and pepper in a small bowl. (2 minutes)

  • 4.

    Serve the cooked lamb patty over a bed of brown rice, topped with the fresh salad and drizzle with dressing. Garnish with fresh herbs. (3 minutes)
