Instructions

In a large bowl, combine the chopped spinach, diced cucumber, halved cherry tomatoes, corn, and chopped onion. (5 minutes)

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. (2 minutes)

Pour the dressing over the salad and toss gently to combine. (2 minutes)
4.
Serve the salad topped with the cooked black bean burger patties. (1 minute)
