Off to an amazing start! Your choice of spinach cucumber and tomato topped black bean burger patty is a great example of a balanced meal

Instructions

  • 1.

    In a large bowl, combine the chopped spinach, diced cucumber, halved cherry tomatoes, corn, and chopped onion. (5 minutes)

    In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. (2 minutes)

    Pour the dressing over the salad and toss gently to combine. (2 minutes)
