Curry chicken w/ brown rice carrots and broccoli.

Happy Friday Ray and the lean protein from the chicken fiber-rich broccoli and carrots and complex carbs from the brown rice make for a satisfying meal that will keep you feeling full!

Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.

  • 2.

    Add minced garlic and grated ginger, cooking for an additional minute until fragrant.

  • 3.

    Stir in the diced chicken breast and cook until browned, about 5-7 minutes.

  • 4.

    Add curry powder, salt, and pepper, stirring to coat the chicken evenly.

  • 5.

    Pour in the coconut milk and bring to a simmer. Reduce heat and let it cook for 10 minutes.

  • 6.

    Meanwhile, cook the brown rice according to package instructions.

  • 7.

    Add broccoli and carrots to the skillet, cooking for another 5-7 minutes until vegetables are tender.

  • 8.

    Serve the curry over brown rice and garnish with fresh cilantro if desired.

    Salt and pepper to taste

    Fresh cilantro for garnish (optional)
