Bravo! Looks delicious and the mixed vegetables provide a good amount of fiber . The gravy made from reduced chicken stock is a nice touch adding flavor without too many extra calories. Remember staying hydrated is key so dont forget to drink plenty of water throughout the day!

Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add sliced pork tenderloin and season with salt and pepper. Cook until browned, about 5-7 minutes.

  • 3.

    Add sliced onions and mushrooms to the skillet. Sauté until softened, about 5 minutes.

  • 4.

    In a small bowl, mix cornstarch with a few tablespoons of chicken stock to create a slurry.

  • 5.

    Pour the remaining chicken stock into the skillet and bring to a simmer. Stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes.

  • 6.

    Meanwhile, steam the broccoli, cauliflower, and carrots until tender, about 5-7 minutes.

  • 7.

    Serve the pork mixture over the steamed vegetables and garnish with fresh herbs if desired.
