Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add sliced pork tenderloin and season with salt and pepper. Cook until browned, about 5-7 minutes.

Add sliced onions and mushrooms to the skillet. Sauté until softened, about 5 minutes.
4.
In a small bowl, mix cornstarch with a few tablespoons of chicken stock to create a slurry.

Pour the remaining chicken stock into the skillet and bring to a simmer. Stir in the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes.
6.
Meanwhile, steam the broccoli, cauliflower, and carrots until tender, about 5-7 minutes.
7.
Serve the pork mixture over the steamed vegetables and garnish with fresh herbs if desired.
