Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Bake the sweet potatoes for about 30 minutes or until tender.
3.
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Add the minced garlic and diced chicken to the skillet. Cook for about 5-7 minutes until the chicken is browned and cooked through.

Stir in the sliced mushrooms and cook for another 5 minutes until they soften.
6.
Add the fresh spinach and cook until wilted, about 2 minutes.
7.
Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half and scoop out some flesh to create a bowl.
8.
Fill each sweet potato half with the chicken and vegetable mixture.
9.
Top with halved cherry tomatoes and diced avocado. Season with salt and pepper to taste.
