Instructions
1.
In a large bowl, combine the mixed greens, diced cucumber, corn, and pickled onions. (5 minutes)
2.
In a separate bowl, mix the Greek yogurt, olive oil, lemon juice, salt, and pepper to create a dressing. (3 minutes)
3.
Add the shredded chicken and crumbled feta cheese to the vegetable mixture. (2 minutes)
4.
Drizzle the dressing over the salad and toss gently to combine. (2 minutes)
5.
Serve immediately, or refrigerate for up to 30 minutes for flavors to meld.
