Instructions
1.
In a large bowl, combine the shredded chicken, diced cucumber, halved cherry tomatoes, chopped spinach, and red onion.
2.
In a separate bowl, mix the Greek yogurt, crumbled feta cheese, olive oil, lemon juice, salt, and pepper until smooth.
3.
Pour the yogurt dressing over the chicken and vegetable mixture, and toss until everything is well coated.
4.
Serve immediately or refrigerate for 30 minutes to let the flavors meld.
