Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add the chicken pieces and cook until browned, about 5-7 minutes.
3.
Stir in the green curry paste and cook for another 2 minutes until fragrant.
4.
Pour in the coconut milk and bring to a simmer.
5.
Add the bok choy, yellow squash, and Anaheim chilies. Cook for 5-7 minutes until the vegetables are tender.
6.
Stir in lime juice and adjust seasoning if necessary.
7.
Serve over cooked brown jasmine rice and garnish with fresh cilantro.

1 cup green curry paste (low-sodium)

1 can (400ml) light coconut milk

2 cups bok choy, chopped

1 cup yellow squash, sliced
7.
1-2 Anaheim chilies, sliced (adjust to taste)
8.
2 cups cooked brown jasmine rice
9.
1 tablespoon fresh lime juice
10.
Fresh cilantro for garnish
