Happy mid week Julia Thanks for this update I can see you included lean protein as well as veggies and you did a great job limiting the amount of carbs (fajita rice). Great job!!

Instructions

  • 1.

    Preheat your grill to medium-high heat (about 375°F).

  • 2.

    In a small bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper.

  • 3.

    Brush the chicken breasts with the spice mixture on both sides.

  • 4.

    Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

  • 5.

    While the chicken is grilling, sauté the sliced bell peppers and red onion in a non-stick skillet over medium heat for about 5-7 minutes until tender.

  • 6.

    Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.

  • 7.

    In a large bowl, combine the mixed salad greens, cherry tomatoes, sautéed vegetables, and sliced chicken.

  • 8.

    Serve topped with guacamole and a side of brown rice if desired.

    1 cup cooked brown rice (optional, for serving)
