Instructions
1.
Preheat your grill or grill pan over medium heat (about 5 minutes).

In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.

Coat each chicken piece in olive oil, then dredge in the breadcrumb mixture until fully coated.
4.
Place the chicken nuggets on the grill and cook for about 5-7 minutes on each side, or until fully cooked and golden brown.

While the chicken is grilling, prepare the salad by combining mixed greens, corn, and cherry tomatoes in a large bowl.
6.
Drizzle with balsamic vinegar and toss gently.
7.
Serve the grilled chicken nuggets alongside the salad and top with sliced hard-boiled eggs.

1 tablespoon balsamic vinegar (for dressing)
