Instructions
1.
Preheat your grill or grill pan over medium heat (about 5 minutes).
2.
Season the chicken breasts with salt, pepper, and your choice of herbs (like oregano or thyme). Grill the chicken for about 6-7 minutes on each side until fully cooked and juices run clear.
3.
While the chicken is grilling, prepare the herbed potatoes by boiling them until tender, then tossing them with your choice of herbs and a pinch of salt.
4.
Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
5.
Warm the whole wheat pita breads on the grill for about 1-2 minutes on each side.
6.
Assemble the pitas by layering spinach, grilled chicken, tomatoes, cucumber, red onion, and feta cheese inside each pita.
7.
Serve the pitas with a side of herbed potatoes and enjoy your healthy meal!
