Instructions

  • 1.

    Preheat your grill or grill pan over medium heat (about 5 minutes).

  • 2.

    Season the chicken breast with olive oil, salt, and pepper. Grill for about 5-7 minutes on each side, or until fully cooked (internal temperature of 165°F).

  • 3.

    While the chicken is grilling, prepare your veggies: slice the bell pepper, red onion, and olives.

  • 4.

    Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.

  • 5.

    Warm the whole wheat pitas on the grill for about 1 minute on each side.

  • 6.

    Spread a generous layer of hummus inside each pita.

  • 7.

    Layer the grilled chicken, mixed greens, bell pepper, red onion, and olives inside the pita.
