Instructions
1.
Preheat your grill to medium-high heat (about 375°F or 190°C).
2.
Season the skinless chicken drumsticks with salt, pepper, and a drizzle of olive oil.
3.
Grill the chicken for about 25 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C).
4.
While the chicken is grilling, heat a skillet over medium heat and add a little olive oil.
5.
Sauté the mixed chopped veggies for about 5-7 minutes until tender.
6.
In a large bowl, toss the chopped romaine lettuce with the sautéed veggies and light Caesar dressing.
7.
Serve the grilled chicken alongside the salad, garnished with fresh herbs if desired.
