Instructions

  • 1.

    Heat 1 tablespoon of olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add the diced chicken breast and season with garlic powder, paprika, salt, and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.

  • 3.

    Remove the chicken from the skillet and set aside.

  • 4.

    In the same skillet, add another tablespoon of olive oil and the sliced red onion and bell pepper. Sauté for about 5 minutes until the vegetables are tender.

  • 5.

    Add the riced cauliflower to the skillet and stir well. Cook for an additional 5-7 minutes until the cauliflower is tender.

  • 6.

    Return the chicken to the skillet, mix everything together, and cook for another 2-3 minutes to heat through.

  • 7.

    Serve hot, garnished with fresh parsley if desired.
