Instructions

    1. Preheat your grill or grill pan over medium heat.

    2. Season the chicken breast with salt, pepper, and a drizzle of olive oil. Grill for about 6-7 minutes on each side or until fully cooked.

    3. While the chicken is grilling, steam the Brussels sprouts and cauliflower for about 5-7 minutes until tender.

    4. In a large bowl, combine the mixed greens, red cabbage, apple, and carrot.
