Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Season the chicken breasts with salt and pepper, then coat them in panko breadcrumbs.
3.
Place the chicken on a baking sheet and bake for 20 minutes or until cooked through and golden brown.

While the chicken is baking, prepare the salad by combining mixed greens, shredded carrots, and sliced almonds in a large bowl.
5.
Once the chicken is done, let it cool for a few minutes before slicing it into strips.
6.
Add the sliced chicken and tortilla strips to the salad, then drizzle with vinaigrette dressing.
7.
Toss gently to combine and serve immediately.
