Instructions

  • 1.

    Preheat your grill or grill pan over medium heat (about 5 minutes).

  • 2.

    Toss the new potatoes in olive oil, salt, and pepper, then place them on the grill. Cook for about 15 minutes, turning occasionally until tender.

  • 3.

    While the potatoes are grilling, add the asparagus to the grill and cook for about 5-7 minutes until tender and slightly charred.

  • 4.

    In a large bowl, combine the sliced grilled chicken, grilled asparagus, new potatoes, and microgreens.

  • 5.

    Drizzle with lemon juice and additional olive oil if desired. Toss gently to combine and serve immediately.
