Instructions
1.
Preheat your oven to 400°F (200°C) for the roasted potatoes. (10 minutes)
2.
Wash and chop the romaine lettuce, and place it in a large salad bowl. (5 minutes)
3.
Cut the potatoes into quarters, toss them with olive oil and salt, and spread them on a baking sheet. Roast for 25-30 minutes until golden brown. (30 minutes)
4.
While the potatoes are roasting, grill the chicken breast until fully cooked, about 6-7 minutes per side. Slice it once cooked. (15 minutes)
5.
Once the potatoes are done, add them to the salad bowl along with the grilled chicken, cherry tomatoes, avocado, and croutons. (5 minutes)
6.
Drizzle with balsamic vinegar, season with salt and pepper, and toss gently to combine. Serve immediately. (5 minutes)

1 tablespoon balsamic vinegar
8.
Salt and pepper to taste
