Instructions

1. Start by grilling the chicken breasts until fully cooked, about 6-7 minutes per side. Let them rest before slicing.

2. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.

3. In a small bowl, whisk together the Greek yogurt, olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to create the dressing.
