Mediterranean chopped salad with chicken breast

Instructions

  • 1.

    Preheat your grill or grill pan over medium-high heat.

  • 2.

    Season the chicken breasts with salt, pepper, and dried oregano.

  • 3.

    Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes before slicing.

  • 4.

    In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and cheese.

  • 5.

    In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over the salad and toss to combine.

  • 6.

    Top the salad with sliced grilled chicken and serve immediately.
